As the temperature rises, there’s nothing better than a cool, refreshing summer salad recipe to take on picnics in the park, seaside retreats or just lunch al fresco in your garden. And with all the farm-fresh markets popping up and veg box delivery options, you can turn over a new leaf, and finally step away from the standard garden or Greek ensembles with the new, exciting and nutritious salad ingredients.

Last year our taste buds were piqued with the TikTok famous Green Goddess Salad by @bakedbymelissa, that’s clocked up 2.1 million views – if you haven’t seen it, you can watch it here.

However, according to The New York Times, the recipe originated from The Palace Hotel in San Francisco in 1923 as a tribute to George Arliss, the star of the play “The Green Goddess.”

So, we thought we would create our very own nutrition-packed version and liven your plate up with a concoction chock-full of anti-inflammatory, alkaline and cleansing ingredients (due to chlorophyll), along with certified beauty foods – vitamins and minerals. The Beauty Daily Summer Salad Recipe

Makes 4 – Quick and Easy – Gluten-Free

Why it should be on your menu? Here’s the lowdown:

  • All greens are anti-inflammatory, alkaline and cleansing due to chlorophyll.
  • Bitters, such as dandelion, rocket and puntarelle, speed up the metabolism and detoxification by enhancing enzyme production and liver function.
  • Fibrous vegetables support gut health.
  • Leafy greens are an abundant source of all vitamins and minerals but should be eaten raw as heat destroys enzymes and vitamins.
  • Broccoli is high in fibre and vitamin C. Vitamin C helps generate collagen and is a powerful antioxidant. It also protects the body from damaging free radicals. In addition, broccoli contains sulforaphane that may prevent cancer cell growth by releasing antioxidant and detoxification enzymes that protect against carcinogens.

Summer Salad Ingredients

5-6 Dandelion leaves

3-4 Puntarelle spears

2 handfuls of Rocket Leaves

2 handfuls of Steamed Broccoli Sprouts

(You can use other bitters of your choice,

such as radish or artichoke leaves)

2 Shaved Asparagus spears

1 Shaved Chioggia Beet

2 tbsp Roasted Pistachios

garlic flowers

Dressing

4 tbsp Extra virgin olive oil

2 tbsp Lemon Juice

1 tsp Wholegrain Mustard

1 Garlic Clove, crushed

1 tsp Maple Syrup

1 tsp Tamari

Optional garnish: garlic flowers

Combine all herbs, drizzle the dressing, and decorate with the garlic flowers.
